Vegan Protein Bars

  • 4 scoops Designs for Health PurePea Protein
  • 1 cup almond flour
  • ½ cup monk fruit (blend to fineness of icing sugar)
  • 1 cup coconut milk
  • ¾ cup cashew butter, room temperature
  • 2 tbsp. hemp seeds
  • 2 tbsp. chia seeds
  • dairy-free stevia sweetened chocolate chips

These no-bake bars contain several different plant-based proteins (hemp, chia and nuts) to achieve a comprehensive amino acid profile, along with quality fat and fibre. Designs for Health PurePea Protein is a great example of a delicious and easily digestible natural pea protein isolate. Made from North American grown yellow peas, this powder contains no dairy, making it ideal for vegans and vegetarians.


Line a baking tray with parchment paper and set aside. In a large mixing bowl, combine the almond flour, monk fruit, PurePea Protein, chia seeds and hemp seeds; mix well. Be sure that your cashew butter is at a pourable consistency and add to the dry ingredients. Using a ¼ cup at a time, add coconut milk and mix until a very thick batter is formed; add additional filtered water if needed to achieve a well combined cookie dough texture. Transfer batter to lined baking tray and press firmly in place. Top batter with chocolate chips. Refrigerate overnight. Slice into bars and enjoy!
