Keto Collagen Bites

  • 1¼ cup raw cashews
  • ¼ cup monk fruit (blend to fineness of icing sugar)
  • Pinch sea salt
  • 1 tsp. pure vanilla extract
  • 2 tbsp. MCT oil
  • ¼ cup coconut oil, melted
  • 1 cup Designs for Health Whole Body Collagen

Whole Body Collagen is a synergistic formulation containing the research-proven collagen peptide blends Verisol®, Fortigel® and Fortibone®1, which are derived from dietary collagen proteins and produced with proprietary hydrolyzation technologies. Whole Body Collagen was incorporated to this recipe to insure adequate intake of these unique amino acids it provides. These bites were made to be keto friendly, low in carbohydrates, moderate in protein, and high in quality fats.


Soak cashews for 2 hours in room temperature water. Transfer cashews to a food processor and pulse until nuts are coarsely chopped. Pause halfway to add sea salt, vanilla, MCT oil, and melted coconut oil. Continue processing until completely smooth. Add collagen powder and monk fruit to processor and briefly mix. Move mixture to silicon moulds or a parchment lined baking dish and press firmly to get rid of air pockets. Freeze trays for 2 hours or until fully set. Let the mould sit at room temperature for 20 minutes before slicing or extracting. Store remaining bites in the fridge or freezer.
