collagen content of PurePaleo Protein is what helps create a syrup-like consistency without any added sugar. This recipe can be modified to be AIP (Autoimmune Paleo) friendly by using carob nibs. This recipe
can be a topping to a protein-based chia pudding, smoothie bowl or a grab-and-go snack.
Preheat oven to 350 degrees. In a large mixing bowl whisk water into protein powder until the consistency of maple syrup. Add coconut, nuts and cocoa nibs to mixture and coat thoroughly. Transfer mixture to a parchment
or silicone lined baking sheet. Bake for 20 minutes or until golden brown. Let granola cool overnight without covering to completely dry. Transfer and store into an airtight container.
