The low glycemic, high antioxidant content of PaleoReds creates a jam that is nutrient dense and without refined sugar. Blueberries are featured in this recipe as they too contain high amounts of antioxidants with a low glycemic profile. This versatile recipe can be made with your choice of low glycemic berries depending on food intolerances or preferences.
In a small saucepan over low heat, add water, lemon juice, PaleoReds powder and berries; mix well. Then add in chia seeds and stir consistently. Chia seeds will begin to swell and thicken mixture to a jam like consistency. Cook until berries begin to stew and mixture is just under the thickness of your liking as the chia will continue to swell. Store in a glass mason jar in the fridge for up to ten days.
